Bill is a Hospitality professional with many years of experience. His major focus has been in the culinary arts and food and beverage management. During the course of his career, which began with a culinary apprenticeship in London, he has worked in Fiji, Australia, and the United States and the Caribbean.
Having worked throughout the Caribbean since 1977 Bill has a long term interest in and commitment to the Caribbean. This has translated into a major involvement in training and in the development of the culinary arts within the region. Bill has worked assiduously to evolve the indigenous Caribbean cuisines to a modern, international, culinary standard.
In addition to running his own training company – Creative Food and Beverage Solutions he has consulted with companies such as Cap Juluca in Anguilla and Round Hill Hotel, the HEART Institute and Usain Bolt’s, Track and Records Restaurant in Jamaica, among others...
Through events such a Taste of the Caribbean, which he has run since 1994, and the mobilization of chefs through the formation of the Caribbean Culinary Federation and the Culinary Federation of Jamaica, Bill has challenged regional chefs to excel and experiment. This has resulted in a deeper understanding of the region’s historical and culinary heritage and increased national pride, resulting in the development of a contemporary Caribbean cuisine.
Contemporary Caribbean Cuisine seeks to reinterpret the essence of the region’s classical dishes and present them in a new, light, exciting and nutritious manner commensurate with modern standards. This work has segued into to a greater appreciation and understanding of the region’s ubiquitous road food culture. Bill has taken a leading role in focusing interest on this area, which has now resulted in his latest culinary venture – Push Cart Foods Inc.
Push Cart Foods, based in Brooklyn, New York is a company that caters to the growing interest in Caribbean food. Push Cart Foods offers a wide variety of services. In addition to a vibrant catering offering, designed to bring a modern taste of the islands to New York, the company offers a full range of consultancy services for those who wish to Caribbeanize their menus or develop a new operation.
Modern Caribbean food has a wide appeal. It not only captures all the energy of the regions’ art and music but is, in and of itself, extremely healthy; widely utilizing functional foods, that is; those items that naturally support and protect physical health.
Bill currently resides in Brooklyn, New York with his wife and life partner Grace. He has three daughters and one son living throughout the United States and Australia. Bill, the recipient of many industry awards and recognitions, has recently earned his MSc. from Revens University.
